Cape Byron Cookie Dough Ice Cream Sandwiches with Magdalena Roze

This fun summer treat is perfect for a make ahead entertaining dessert… or made for one!

Ingredients:

  • 1 Generous scoop of Norco Cape Byron Classic Cookie Dough
  • 2 Cookies with chewy texture (not too thick or crumbly)

Method:

Place 1 scoop of ice cream between the two cookies and gently press the cookies together (ice cream should spread to cookie edges). For best results ice cream should be slightly softened but not melted so the cookies don’t break when pressed together.

Tip: To prepare a number of ice cream sandwiches in advance, place the ice cream scoops between two lined cookie trays or baking sheets lightly pressed and then freeze until ready to assemble.
