Vanilla Ice Cream with Tropical Granita & Lime
This dessert is sunshine in a bowl—cool, bright, and bursting with tropical freshness. Silky vanilla ice cream meets an icy granita infused with pineapple, passionfruit, and a squeeze of lime, creating a vibrant contrast of creamy and crisp. Light, colourful, and effortlessly elegant, this dish feels like a mini holiday. It’s simple to prepare yet full of flavour, delivering that irresistible mix of chill, citrus, and tropical fruit that keeps you coming back for more.

What You’ll Need
½ cup water
½ ripe pineapple, peeled and chopped into rough pieces
½ cup sugar, caster
½ lime, juiced
2 x scoops Norco Cape Byron Ultimate Vanilla ice cream
In a small saucepan add the sugar and water over a low heat and let the sugar dissolve without stirring.
When the sugars dissolved take off the heat and allow it to cool completely.
Pour the cold sugar syrup along with the pineapple pieces and lime juice in a stick blender or a food processor and blitz on high until it is completely pureed without any chunks.
Pour the mixture into a shallow baking tray and allow to freeze for a minimum of 4 hours or overnight.
Remove from the freezer and scrape away with a fork.
Serve over 2 x scoops of Norco vanilla ice cream and finish with some lime zest.
