Apple and Ricotta Kanafeh

Cook Time: approx. 45 mins

3 cups cornflakes, crushed
1 cup melted Norco salted butter
3 pink lady apples, diced
1 jar Apple Sauce
250g Ricotta cheese
1 cup shredded Norco mozzarella

To serve
Maple syrup
½ cup pistachios, crushed

Preheat the oven to 180C.
In a medium bowl combine cornflake crumb and butter and rub together until most of the cornflakes are coated.
Press mixture in the base of an ovenproof pan (approx. 20cm) and up the sides.
Spread jar of apple sauce all over the surface of the kataifi pastry, scatter diced apples and do the same with the ricotta cheese. Top with mozzarella cheese.
Bake in the oven for approx. 20 mins or until golden brown.
Remove from the oven and allow it to stand for 5 mins. Flip out onto a serving platter and serve immediately (while hot so cheese remains melted).
Top with crushed pistachio and serve with maple syrup on top if required.
