What You’ll Need

1 cup Mochiko flour

½ cup unsweetened cocoa powder

1 cup granulated white sugar

1½ tsp baking powder

2 large eggs

1 tsp vanilla extract

3 tbsp dark chocolate, chopped

Step 1

Preheat the oven to 180°C. Line a 20 x 20 cm baking pan with baking paper.

Step 2

In a medium bowl, whisk together the Mochiko flour, cocoa powder, sugar, and baking powder until evenly mixed.

Step 3

In a large bowl, whisk together the melted butter, eggs, milk, and vanilla extract until fully combined. Add in the dry ingredients and mix until evenly blended.

Step 4

Pour the batter into the prepared baking pan. Sprinkle the surface with chopped dark chocolate.

Step 5

Bake for 30-40 minutes, or until the mochi is set. Allow it to cool completely before slicing and serving.
