Fragola Rock

This Fragola Rock dessert is a playful celebration of strawberries in all their sweet, vibrant glory. It’s the kind of dessert that looks impressive but feels wonderfully effortless, perfect for warm days, dinner parties, or anytime you want something that’s equal parts fresh and indulgent. Bursting with flavour and texture, this dish turns simple ingredients into a show-stopping sweet moment.

What You’ll Need

Step 1

Moisten castor sugar with a little water in a saucepan and heat on high until a brown caramel is formed

Step 2

Remove from heat and whisk in butter, salt, balsamic and cream

Step 3

Allow to cool and fold in the fresh fingerlime caviar

Step 4

Make toffee (brown caramel as per the caramel method)

Step 5

Toast nuts in fry pan

Step 6

combine toffee and nuts

Step 7

allow to set in flat tray, crush into a praline when cooled.

Step 8

Preheat oven to 160°C

Step 9

Mix all dry ingredients

Step 10

Cream eggs, yolk and sugar

Step 11

Incorporate wet mix into dry, folding in dry fruit, zest and nuts to make dough

Step 12

Chill dough for 2hours

Step 13

Shape into a 25cm x 5cm log, brush with egg white and sprinkle with raw sugar

Step 14

Bake at 160°C for 45mins

Step 15

Cool, then slice into thin “fingers” and lay on a tray and bake 110deg for 20mins until just starting to brown
